Monkey Butter!

Something good does come from the Fox News Station! Monkey Butter French Toast!

Basic French Toast
2 eggs or egg whites, lightly beaten
8 slices firm white or whole wheat bread
1 teaspoon vanilla
2/3 cup milk
2-3 teaspoons butter
1/2 teaspoon cinnamon

Combine eggs and milk in a pie plate; beat with a fork until well
blended. Dip bread slices into the mix to coat each side. Melt 1
teaspoon butter in a skillet over medium heat. Transfer a coated
bread slice to the hot skillet. Brown each side 2-3 minutes or until
golden brown. Continue with other slices, adding butter as needed.
Discard any leftover egg mixture. Serve immediately. Or wrap,
and place in the freezer for later use.

Note: The frozen slices can be thawed in a toaster set on
MEDIUM, in a microwave oven set on HIH for 30-45 seconds, or in
an oven set at 400F for about 10 minutes.

Traditional: French toast is yummy with a sprinkle of powdered
sugar, jam or syrup.

New: Slice them into strips and dip into monkey butter. To make
monkey butter, combine one mashed banana with 2 Tablespoons
reduced-fat peanut butter, 1 cup vanilla yogurt and 2 teaspoons
cinnamon sugar.
